Chef Chloe – My Vegan Savior and New Best Friend

With headlines like these all around, it is hard not to get discouraged:

“Milk does a body good – especially for athletes!

Being forced to eat a vegan diet was certainly not something I had ever anticipated.  As I mentioned earlier this year, my favorite food group (after Fruit) was Dairy.  Milk, ice cream, cheese, butter, yogurt – YUM!  As the months have passed, I have slowly become friends with soy milk in my coffee and almond milk on my cereal.  I can actually now enjoy a bowl of coconut milk ice cream (chocolate peanut butter being my all time favorite – and very good too – as long as you erase the memory of Haagen Dazs from your mind).  And thank goodness for Earth Balance sticks, which I use as a sub in all recipes calling for butter.

So imagine my complete shock and delight when I ran across this New York Times headline:

Tasty Vegan Food?  Cupcakes Show it Can Be Done

It made me SO excited I found myself going on and on about it at the dinner table last night.  My kids sat there wide-eyed as I gave them the story:  Imagine being a finalist on Food Networks’s Cupcake Wars and you are making VEGAN cupcakes.  But the thing is all the other contestants are using all the regular ingredients one would traditionally use (butter, milk, eggs, etc).  It is one thing to make the best vegan cupcake, but to make the BEST cupcake – now that is truly something.

This young vegan cook won the competition.  Her vegan cupcakes beat out all the others loaded with butter and milk and all those rich, creamy ingredients I can’t have anymore.  How in the world could a vegan cupcake be BETTER than a regular one?  Talk about an accomplishment!

For the first time in quite a while, I am inspired by the possibilities.  You may not HAVE to stay away from all things “cow” like me, but you might want to consider a healthy alternative from time to time.  Challenge yourself – try baking these and see what you think!  I can’t wait to give them a try!  Neither can my kids.

    This chef is the bomb!My mouth is watering looking at that cupcake.It could not hurt to actually try making this myself.And its a very healthy alternative,considering what ingredients that are being used.
